Apple Cinnamon Truffles

These whole food energy bites are a great alternative to commercial bars which may have unwanted processed ingredients. Perfect before a workout for a burst of energy or for fast fuel while sightseeing. Pair with a high protein option - greek yogurt or a chomps stick!

Ingredients

  • 1 1/2 cup rolled oats
  • 1 1/2 cup medjool dates
  • 1/2 cup walnuts
  • 1 cup apple – peeled and chopped
  • 1 tsp cinnamon
  • 2 tbsp honey (optional)
  • Himalayan sea salt

Method

  1. Soak the walnuts in filtered water in a covered container for 4 hours or overnight.
  2. In a food processor combine the oats, nuts and dates. Add the rest of the ingredients and continue to blend until a it forms a thick mash. The honey is optional depending on the sweetness of your apples and your taste.
  3. Roll into balls and roll into some extra oats to coat.
  4. Can be stored in fridge for up to 3 days or freeze for up to 2 months.
