Filling Ingredients:
- 4 cups frozen organic berries
- 2 tbsp maple syrup
- 1 tbsp fresh lemon juice
- 1 tsp vanilla
- 1 tbsp arrowroot or cornstarch
Method:
- Combine all ingredients in a bowl and mix. Let sit for 1/2 hour.
- Preheat oven 350°.
- Grease a 12 inch pie dish with a bit of coconut oil. Top with berry mixture.
Crumble Ingredients:
- 1 cup rolled oats
- 1 cup walnuts – finely chopped
- 1 cup almond flour
- 1/4 tsp salt
- 1/2 cup maple syrup
- 1/3 cup melted coconut oil
- 1 tsp vanilla
Method:
- Combine all the dry ingredients and mix. Add wet ingredients and stir.
- Add on top of the berry mixture in the baking dish.
- Bake for 45 minutes.
- Serve warm with choice of creamy topping.
