High Protein French Toast

A high protein spin on your classic french toast recipe. Adding egg whites and pea protein to the egg mixture gives this meal a protein boost without compromising flavor. Top with greek yogurt to enhance the protein and taste even more!

Ingredients

  • 4 slices of Ezekiel Bread
  • 1/2 cup liquid egg whites (or egg whites from 3 whole eggs)
  • 1 whole egg
  • 2 teaspoons vanilla extract
  • 1 teaspoon cinnamon
  • 1/2-1 scoop of protein powder of choice (optional)
  • 1 tbsp butter or oil
  • Top each serving with 2 heaping tablespoons of greek yogurt

 

Optional Additional Toppings: hemp hearts, berries, pumpkin seeds, nut butter, pure maple syrup, or honey.

 

 

Method

  1. In mixing bowl whisk your egg whites, egg, and vanilla extract together until combined.
  2. Add the cinnamon and protein powder. Mix until everything is fully blended.
  3. Pour into a shallow, flat bottomed dish
  4. Place the Ezekial bread in the egg mixture and soak it, flipping it to make sure both sides are evenly coated.
  5. While the bread is absorbing the egg mixture, grease a frying pan with butter or olive oil over medium heat.
  6. Once the pan is heated, add the bread.
  7. There will be enough of the egg mixture for 4 slices!
  8. Cook for about 2-3 minutes on each side or until golden brown.
  9. Serve with greek yogurt and additional toppings of choice!
