Mashed Edamame Spread

This edamame spread is a great source of protein with approx 18 grams per serving. Add some hemp hearts to boost the protein content and serve as a sandwich spread or a dip with crackers or fresh seasonal veggies.

Ingredients

  • ¼ cup tahini
  • 12 oz shelled frozen edamame, defrosted
  • ½ medium ripe avocado
  • 1 ½ tbsp tamari
  • 3 – garlic cloves
  • ½ – 1 serrano pepper (optional)
  • 1 handful fresh cilantro
  • 1 tsp extra virgin olive oil (or toasted sesame oil)
  • 1 large lime
  • Salt to taste
  • 3 tbsp hemp hearts (optional)
  • Pickled onions (optional)

Method

  1. Add the tahini, edamame, avocado, soy sauce, garlic, chile pepper, cilantro, olive oil, and lime zest and juice to a food processor. Start blending until it turns into a chunky dip. Season with salt to taste as needed.
  2. Serve on toast with hemp seeds or pickled onions and a garnish of cilantro.. Or serve as a dip with vegetable crudite or crackers.
