INGREDIENTS
  • 2 cups cooked chickpeas – 16 oz can
  • 1 tbsp extra virgin olive oil
  • 1 tsp Nutritional Yeast
  • 1 tsp dried parsley
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp cumin
  • 1/4 tsp coriander

 

Method

  1. Preheat oven to 400 F.
  2. While the oven is heating combine and blend the Nutritional Yeast, parsley, garlic powder, onion powder, cumin and coriander in a small bowl.
  3. Line a baking tray with parchment paper and and drizzle with EVOO
  4. Rinse the chickpeas and put them onto the lined baking tray.
  5. Sprinkle with the spice mixture and the rest of the olive oil. Toss to coat. 
  6. Roast for 25-30 minutes.
  7. Cool. The chickpea croutons are ready to add to salads, as a soup garnish, or a snack.

 

Variations:

For a spicier version add chili powder to the spice mix
