- 2 cups cooked chickpeas – 16 oz can
- 1 tbsp extra virgin olive oil
- 1 tsp Nutritional Yeast
- 1 tsp dried parsley
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp cumin
- 1/4 tsp coriander
Method
- Preheat oven to 400 F.
- While the oven is heating combine and blend the Nutritional Yeast, parsley, garlic powder, onion powder, cumin and coriander in a small bowl.
- Line a baking tray with parchment paper and and drizzle with EVOO
- Rinse the chickpeas and put them onto the lined baking tray.
- Sprinkle with the spice mixture and the rest of the olive oil. Toss to coat.
- Roast for 25-30 minutes.
- Cool. The chickpea croutons are ready to add to salads, as a soup garnish, or a snack.
