INGREDIENTS
  • 1 large or 2 small beets -peeled and shredded
  • 2 carrots – peeled
  • 1 apple – peeled
  • 1 small bulb fennel
  • fresh mint
  • sunflower seeds
  • fresh lemon
  • Himalayan sea salt

 

Method

  1. In a food processor with a grater attachment grate the beets, carrots and apple into a medium size bowl.
  2. Slice the fennel thin and add to the other root veggies.
  3. Season with fresh lemon and sea salt.
  4. Sprinkle with sunflower seeds and fresh mint
  5. Plate on fresh salad greens.
